chocolade red velvet cheesecakes

Ingredients
- 350 grams of chocolate cookies
- 40 grams of almond flour or flakes
- 100 grams of unsalted butter
- cocoa powder
For the filling:
- 250 grams of cream cheese
- 150 grams of ricotta
- 110 grams of fine sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 100 grams of chocolate callets (melted)
- 2 tablespoons of red food coloring
Preparation method
- Place the biscuits and almond flour in the bowl of a food processor and process into coarse crumbs. Add the butter and mix everything.
- Line the bottom of the baking tins with baking paper or butter.
- Using the back of a spoon, press the crumb mixture into the bottom of the shapes.
- Chill for 30 minutes - 1 hour or until cold.
- Preheat the oven to 140 ° C.
- To make the filling, place the cream cheese, ricotta and sugar in the bowl of a food processor and process for 2-3 minutes or until smooth.
- Scrape the sides of the bowl, add the eggs and vanilla and mix a little longer. Add the chocolate and food coloring and process until well mixed.
- Divide the mixture between the molds and bake for 40-45 minutes or until done.
- Let the cakes sit at room temperature for 30 minutes before refrigerating for 2-3 hours or until cold.
- Dust with cocoa just before serving.
